Sesame-Crusted Tuna with Mango Salsa

Ingredients
  • MANGO SALSA
  • 2-3 ripe mangos, diced
  • 1 red bell pepper, seeded and diced
  • ½ red onion, diced
  • 1 jalapeño, seeded and minced
  • ¼ cup cilantro leaves, chopped
  • 2 limes
  • ½ tsp salt
  • SESAME-CRUSTED TUNA
  • 4 ahi tuna steaks (1½ to 2 inches
  • thick, about 6 oz each)
  • ¼ cup white sesame seeds
  • ¼ cup black sesame seeds
  • Salt and pepper
  • 1 tbsp olive oil
Directions
Step 1
Add mango, red pepper, red onion,
Step 2
jalapeño and cilantro to a medium-size
Step 3
bowl and mix together.
Step 4
Squeeze lime juice over the top and sprinkle
Step 5
with salt and stir.
Step 6
Refrigerate until ready to serve.
Step 7
Season the tuna on both sides with salt and
Step 8
pepper.
Step 9
Press the tuna into the sesame seeds, coating
Step 10
completely on all sides.
Step 11
Heat the oil in a skillet over medium-high heat.
Step 12
To avoid overcrowding the pan, sear two tuna
Step 13
steaks at a time. Use tongs to gently support the
Step 14
steaks while searing. Once the pan is hot, sear
Step 15
each side just long enough for the white sesame
Step 16
seeds to develop a little golden color, 1 to 1½
Step 17
minutes per side.
Step 18
Transfer the tuna to a cutting board, repeat the
Step 19
process with the remaining steaks.
Step 20
Cut the tuna steaks into thin slices and arrange
Step 21
over fresh greens.
Step 22
Serve with mango salsa and steamed rice.
