Caribbean Burgers with Tropical Fruit Salsa

Ingredients
- SALSA
- 1 cup fresh pineapple, finely chopped
- 1 ripe mango, peeled, seeded
- and finely chopped
- 1 tsp cinnamon
- ¼ cup red bell pepper, seeded
- and finely chopped
- ¼ cup red onion, finely chopped
- ¼ cup cilantro, finely chopped
- 1 tsp brown sugar
- 1 jalapeño, seeded and minced
- PATTIES
- 2½ lbs ground beef
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 tsp ground allspice
- 1 tsp crushed red
- pepper flakes
- 1 tsp ground nutmeg
- 1 tsp cayenne pepper
- 1 tsp cinnamon
- 2 tsp brown sugar
- ¼ tsp salt
- TOPPINGS
- 6 tomato slices
- 6 crisp iceberg lettuce leaves
- BUNS
- 6 burger buns, split and lightly toasted on the grill
Directions
- Step 1
- Combine all of the salsa ingredients in a medium-size bowl
- Step 2
- mix well and refrigerate until ready to use. The salsa will keep for 2 to 3 days in the fridge.
- Step 3
- Mix ingredients for patties in a medium-size bowl. Form mixture into six even patties. Place patties on a sheet of wax paper until ready for grilling. Preheat grill for high heat, place beef patties on grill for about 5 minutes on each side.
- Step 4
- Remove from grill and place patties on bottom half of buns, place pineapple slices on cooked patties (one per burger), add grilled red bell peppers (two per burger) and remaining toppings.
- Step 5
- Cover each burger with the top of a bun and serve
