Sesame-Crusted Tuna with Mango Salsa

Ingredients
- MANGO SALSA
- 2-3 ripe mangos, diced
- 1 red bell pepper, seeded and diced
- ½ red onion, diced
- 1 jalapeño, seeded and minced
- ¼ cup cilantro leaves, chopped
- 2 limes
- ½ tsp salt
- SESAME-CRUSTED TUNA
- 4 ahi tuna steaks (1½ to 2 inches
- thick, about 6 oz each)
- ¼ cup white sesame seeds
- ¼ cup black sesame seeds
- Salt and pepper
- 1 tbsp olive oil
Directions

- Add mango, red pepper, red onion,

- jalapeño and cilantro to a medium-size

- bowl and mix together.

- Squeeze lime juice over the top and sprinkle

- with salt and stir.

- Refrigerate until ready to serve.

- Press the tuna into the sesame seeds, coating

- Heat the oil in a skillet over medium-high heat.

- To avoid overcrowding the pan, sear two tuna

- steaks at a time. Use tongs to gently support the

- steaks while searing. Once the pan is hot, sear

- each side just long enough for the white sesame

- seeds to develop a little golden color, 1 to 1½

- Transfer the tuna to a cutting board, repeat the
